Check what is actually saved: Open ChatGPT and look at the sidebar. Anything listed there is saved to that account. Then open Settings, then General, then Archived chats, because archived threads are still saved but hidden from the list.
Know when a chat is not saved: A temporary chat, sometimes shown as a lightning or incognito style option, is never written to your history. Close it and the text is gone with no way back.

Whether a conversation is saved to your sidebar and whether it may be used to improve models are two different settings. Data controls in Settings governs the second one. Turning training off does not delete existing chats, and turning it on does not add anything to your sidebar.
Why keeping your own copy matters
Everything above sits in someone else's account system. An account switch, a workplace change, a mis-tap on delete, or a plan you stop paying for can all put your history out of reach in seconds. An export is the only version that cannot be changed underneath you.
Your export is also the complete record. It contains the full text of every conversation with real timestamps, rather than the part of a long thread that happened to be loaded in the page.
